Locally sourced A‑grade molasses is fermented and column‑distilled for a clean base, matured in charred ex‑bourbon casks to develop vanilla and light spice, then carbon‑filtered to remove color while retaining aroma. The result is an approachable, mildly sweet rum with vanilla, coconut, sugarcane syrup, and a touch of white pepper and citrus pith.

Tasting notes

• Aroma: Light vanilla, coconut flakes, marshmallow, cane syrup, and faint banana peel.

• Palate: Soft entry with vanilla cream, toasted coconut, light caramel, white pepper, and a hint of pineapple.

• Finish: Clean, medium‑short with gentle oak spice, coconut, and a whisper of citrus.
