Sparkling white wine blended from Chardonnay (approx 80%) and Pinot Noir (approx 20%). Chardonnay harvested early for acidity. Pinot Noir gently pressed to avoid color extraction. Secondary fermentation with extended lees aging for autolytic character. Bottled at 11.5-12.0% ABV in 750ml (200ml available). Residual sugar 11-13.1 g/L. Agglomerated cork with wire cage. Contains sulfites.
