Single varietal white wine made from 100% Sauvignon Blanc, sourced from estate and grower vineyards across Wairau Valley floor (including Estate, Motukawa, Widow's, Red Shed, and Mustang vineyards); primarily fermented in temperature-controlled stainless steel, with 1.5% to 5% of blend fermented in large-format oak vats or older French oak barriques using wild yeasts; bottled at 13.0% to 13.5% ABV (vintage dependent), pH approximately 3.10-3.26, total acidity 6.7-7.6 g/L, residual sugar 1.3-2.6 g/L; screw cap closure.
