Côtes de Provence AOC rosé wine from 59% Grenache (80-90 year old vines on highest elevations), 21% Cinsault, 9% Syrah, 6% Rolle (Vermentino), and 5% Carignan. Clay, limestone, and sandy gravel soils. Manual harvest sunrise to noon. Optical sorting. Destemming and soft pneumatic crushing at 7-8°C (44-46°F). 100% stainless steel fermentation. Aged on fine lees 3-4 months with twice-weekly bâtonnage. Bottled at 13.0-13.5% ABV in 750ml. Residual sugar 0.2-0.5 g/L (bone-dry). Contains sulfites.
