Ultra-premium Japanese craft gin. Alcohol content is 45.7% ABV (91.4 proof). The base spirit is 100% rice spirit, and the gin is proofed using soft underground water from the Fushimi sake-brewing district. The gin is produced using individual volumetric distillation, in which 11 hand-selected botanicals are divided into six distinct flavor categories (Base, Citrus, Tea, Herbal, Spice, Fruity & Floral), each macerated in rice spirit and distilled separately before blending. Botanicals include juniper berries, Akamatsu (Japanese red pine wood chips), yellow yuzu, lemon peel, Gyokuro green tea leaves, red shiso leaves, bamboo leaves, green sanshō (Japanese peppercorn), kinome (sanshō leaves), and fresh ginger. The appearance is brilliant and crystal clear. The label is produced by Kira Karacho, a Kyoto karakami atelier operating since 1624. No specific still sizes, vacuum pressure levels, or fermentation details are specified by the producer. KI NO BI translates to "The Beauty of the Seasons."
