Zenato Amarone della Valpolicella Classico is a red wine from the Amarone della Valpolicella Classico DOCG, produced by Azienda Vitivinicola Zenato from 80-85% Corvina, 10% Rondinella, 5% Croatina, and 5% Oseleta sourced from hillside parcels in Sant'Ambrogio. Hand-harvested grapes undergo appassimento for 3-4 months in plastic tray racks, with pressing in January after water weight loss. Extended alcoholic fermentation on skins lasts 15-25 days with regular pumpovers. The wine is aged for 36 months in large Slavonian oak casks, followed by 12 months bottle refinement. Bottled at 16.5% ABV in a 750ml bottle with approximately 6.8-7 g/L residual sugar. The profile is majestic and full-bodied with black cherry and dark chocolate notes.
