Sensi Ninfato is a red wine from the Toscana IGT appellation, produced by Sensi Vini from 100% Sangiovese sourced from Vinciana hillsides on heavy clay soils rich in minerals and potassium at 5,000 vines per hectare. Completely destemmed grapes undergo temperature-controlled fermentation at 26-28°C for 8-10 days without added sulfites. The wine is aged for 6 months in stainless steel vats at 10-12°C with weekly bâtonnage on fine lees. Bottled at 14% ABV in a 750ml bottle with zero added sulfites (natural occurrence under 9 mg/L). The profile is full-bodied and fresh with cherry and rose notes.
