Los Javis Espadín Joven Mezcal is crafted from 100% blue agave Espadín, the most cultivated maguey variety in Oaxaca, prized for its high sugar content and characteristic flavor profile. The agave plants are hand-selected and grown in the humid and arid central valleys of Oaxaca, requiring eight to twelve years to reach full maturity. Roasted in a traditional conical stone oven using natural wood, the cooked agave is crushed using a tahona (traditional stone wheel), then naturally fermented in open wooden vats with wild yeasts before undergoing double distillation in small copper pot stills. The result is an unaged joven mezcal bottled directly after distillation, capturing bright, smoky complexity with traditional Oaxacan character.​
