Product Description
Knob Creek 12 Year is a Kentucky straight bourbon whiskey aged for a full 12 years and bottled at 100 proof (50% ABV). It uses the same approximate mash bill as the core Knob Creek bourbon (around three‑quarters corn with rye and malted barley making up the balance) and is produced as a small‑batch expression from a limited number of barrels. The extra three years over the 9 Year release allow additional development of oak, caramel, and spice notes, as well as more pronounced tannins and structure. It remains a non‑chill‑filtered or lightly filtered, traditionally styled bourbon focused on richness and body.
Tasting Notes
Aroma: In my tastings, the nose shows dark caramel, brown sugar, and maple syrup along with toasted nuts, dark chocolate, and a hint of varnished oak. There are also notes of Luxardo‑style cherries, cola, and a touch of licorice and baking spice.
Palate: I find the palate chewy and full, with strong oak tannins, dark chocolate, cooked berries, and candied ginger supported by black pepper and tea‑leaf dryness. A few drops of water help reveal more maple‑coated walnuts, orange oil, and additional sweetness that can be hidden at full 100 proof.
Finish: The finish is long, with chocolate‑covered cherry notes, black tea, white and black pepper, and lingering dry oak. The aftertaste often shows a mix of cocoa, spice, and faint citrus bitterness.
